Pumpkin Hummus

Festive recipe perfect for fall, pumpkin gives this lemon-y hummus a pop of orange!

Ingredients

  • 1 15 oz can chickpeas
  • 1/4 cup tahini
  • 1/2 cup pumpkin puree
  • 2 tbsp olive oil
  • 3/4 juice of a lemon
  • 2-3 cloves garlic
  • Salt

Instructions

  • Rise and drain chickpeas (save liquid from chickpeas in a separate cup).
  • Recommended remove skins from chickpeas. 
  • Add chickpeas and garlic to food processor and start blending.
  • Slowly incorporate tahini, pumpkin puree, olive oil, salt, and lemon juice and continue blending.
  • If hummus is too thick add 2-4 tbsp of chickpea liquid.
