    My go-to high protein, crunchy buffalo chicken sal My go-to high protein, crunchy buffalo chicken salad 🔥🥗

This is one of those meals that hits everything — protein, crunch, flavor, and it actually keeps you full.

What you need:
	•	1 large chicken breast (~8 oz)
	•	Garlic + onion powder
	•	Olive oil
	•	~¼ cup cottage cheese
	•	~¼ cup Primal Kitchen buffalo sauce (adjust to taste)
	•	Celery, chopped
	•	½ apple, chopped
	•	Red onion, finely chopped
	•	Salt to taste
	•	Light drizzle of Mike’s Hot Honey

How to make it:
	1.	Season chicken with garlic + onion, then sauté in olive oil until fully cooked.
	2.	Shred (I use a food processor for ease) and transfer to a bowl.
	3.	Blend cottage cheese until smooth — this is your creamy, high-protein base.
	4.	Mix chicken with cottage cheese + buffalo sauce.
	5.	Fold in celery, apple, and red onion.
	6.	Add salt as needed + finish with a drizzle of hot honey to bring it all together.

Chef note:
Next time I’m adding caramelized yellow onion for even more depth 🤌

How to eat it:
	•	With cucumber slices or lettuce cups (my favorite for that fresh crunch)
	•	Scooped with tortilla chips
	•	Wrapped with cheese, lettuce, and tomato = elite
