Lemon-y Tuna Pasta Salad

Ingredients

  • 1/2 cup cooked Banza Pasta
  • 1 can tuna I use Trader Joe’s No Salt
  • 1/2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1 tsp mustard
  • juice of 1 lemon and zest
  • 1/3 cup peas
  • 1 tbsp mozzarella cheese

Instructions

  • Cook pasta according to box instructions. I had pre-cooked a whole box of Banza to make easy lunches.
  • Place 1/2 cup cooked pasta in a bowl add olive oil, garlic powder, and cheese.
  • Drain excess water from tuna and place in a separate bowl, add the juice of a whole lemon, about a teaspoon of zest and mustard use a fork to stir and combine.
  • Boil peas or microwave for 2 minutes in water, drain and add to bowl with pasta, stir and combine.
  • Add tuna to the original bowl of pasta mix it up and enjoy!
