

Lemon-y Tuna Pasta Salad
This Tuna Pasta Salad makes the perfect protein packed lunch with a delicious hint of lemon.
Ingredients
- 1/2 cup cooked Banza Pasta
- 1 can tuna I use Trader Joe’s No Salt
- 1/2 tbsp olive oil
- 1/2 tsp garlic powder
- 1 tsp mustard
- juice of 1 lemon and zest
- 1/3 cup peas
- 1 tbsp mozzarella cheese
Instructions
- Cook pasta according to box instructions. I had pre-cooked a whole box of Banza to make easy lunches.
- Place 1/2 cup cooked pasta in a bowl add olive oil, garlic powder, and cheese.
- Drain excess water from tuna and place in a separate bowl, add the juice of a whole lemon, about a teaspoon of zest and mustard use a fork to stir and combine.
- Boil peas or microwave for 2 minutes in water, drain and add to bowl with pasta, stir and combine.
- Add tuna to the original bowl of pasta mix it up and enjoy!
