Cuban Cauliflower Fried Rice

You can take the girl out of Miami, but you can’t take the Finka out of the girl.

Cuban Cauliflower Fried Rice

Ingredients

1/4 white onion, diced

1/2 red bell pepper, diced

3-4 garlic cloves, minced

1 bag frozen cauliflower rice

1/2 cup peas

1 stalk of scallions, chopped

4 eggs (2 scrambled, save the other 2)

5 tbsp gluten-free Tamari sauce or soy sauce * (low sodium)*

1/2 cup pineapple tidbits

1 ripe plantain or banana sliced

Olive Oil

* you’ll need multiple saucepans

 

Instructions

  1. Scramble 2 eggs, thoroughly cooked, set aside.

  2. Heat olive oil in a large saucepan.

  3. Add red peppers, onions, and scallions. Sauté on medium heat for about 3 mins.

  4. Add the bag of frozen cauliflower rice and garlic to that saucepan. Stir to combine all ingredients on medium-high heat, continue cooking for 5 mins.

  5. While that’s cooking, coat another saucepan in olive oil using medium heat add sliced plantains. Brown on one side for 3 mins, flip, brown the other side for another 3 mins.

  6. Add tamari/soy sauce to rice mixture and continue stirring.

  7. Mix in the peas (mine are usually frozen).

  8. There should be liquid from the cauliflower and sauce, let that reduce. When it’s dried up, lower heat.

  9. Finally, add plantains and pineapples to rice mixture. Stir to combine all ingredients.

  10. Remove from pan and plate! Fry an egg and add it to your bowl, definitely insta-worthy.
